I need a simple recipe from Azerbaijan. I live in a small midwestern town so I can't really buy exotic ingredients but I want to make my man happy ;)

<p><i>Answer by w0rchyld</i><br/>Plov - Plov is generally considered to be an Uzbek dish, but you can find it all over Central Asia. This particular recipe is from Azerbaijan

Ingredients

4 tablespoons unsalted butter
1 cup grated carrots
1/3 cup slivered almonds
grated zest of 2 oranges
1/3 cup of golden raisins
¼ teaspoon ground turmeric (I've used ground mustard with success as a substitute)
1 ½ cups long-grain rice
3 cups boiling chicken stock, canned broth, or water
salt to taste (I use 2-3 dashes)

Instructions

1. Melt the butter in a heavy 2-quart saucepan over medium-low heat.
2. Add the carrots and stir over medium heat for about five minutes.
3. Stir in the almonds, zest, raisins and turmeric, and continue to stir for another 3-4 minutes.
4. Add the rice and keep on stirring until the rice is well coated with the butter and takes on some color (about 2 minutes).
5. Pour in the boiling stock in a steady stream and let boil for about 2 minutes.
6. Add salt, reduce the heat to very low, cover tightly, and simmer until all the liquid is absorbed, 15-20 minutes. Let stand, covered, for 10 minutes.
7. Fluff the rice with a fork and transfer to a serving platter. Stir gently before serving.</p>
